Tropical Kimchi is a full flavour explosion. Serve with grilled protein, seafood, and pork. It’s delicious with cheese or sprinkled or a salad and makes a killer toastie too!

The Wild Fermentary is excited to launch a tropical twist on traditional kimchi, exploding with fresh nutrient-dense pineapple to drive positive change for our food system.

Tropical Kimchi has been developed in collaboration with a major food processing company to rescue over 300kg of ripe pineapple every year. Tropical Kimchi ferments pineapple that is too ripe to last the required week on a supermarket shelf, making full use of pineapple that would otherwise be lost to our food system. It is a great way to boost the flavour and health properties of your next meal, all while supporting positive change for our local food system.

With more than a third of all food produced around the world being lost or wasted in the current food system, food waste has become a significant global concern. At The Wild Fermentary we recognise our food choices play a significant role in the environmental challenges of our time and are dedicated to being part of the solution. Every jar of Tropical Kimchi puts nutritious pineapple back on shelf so customers can make their shop count.

As well as contributing to a more efficient food system, Tropical Kimchi is bursting with bold flavour and life-sustaining nutrients from fresh turmeric root, fresh garlic and fresh ginger root. It is handcrafted in small batches using natural wild fermentation for greater microbial diversity, to support gut health.

The Wild Fermentary is fizzing to be serving up the ferments of the future and passionate about putting LAB (lactic acid bacteria) back in collaboration. Tropical Kimchi is our fourth collaboration, having partnered with Six Barrel Soda on Lime Cola Kefir Soda; Wellington Apothecary on Stress Relief Gut Shot and Espresso Workshop on a limited-edition Coffee Kefir which won gold at the Outstanding NZ Food Awards. 

About The Wild Fermentary – redefining waste

At The Wild Fermentary, we are passionate about redefining waste, a core principle of our Permaculture practice. We also have a compost system we have developed in conjunction with the 120-acre farm on which our Fermentary is located. This enables us to bring together our Fermentary food waste with horse farm and stable waste to produce an amazing rich compost that is used back on the farm, and in our Fermentary garden.
