PREP/COOK TIME: 20 minutes
SERVES: 2
INGREDIENTS:
4 eggs or 2 servings of firm tofu
1/4 cup Gold Kraut
Salt + pepper
Avocado or coconut oil for cooking
TO SERVE:
2 thick slices of toast
Microgreens or fresh herbs
METHOD:
Whisk the eggs in a small bowl and season with a little salt. If using tofu, crumble into a bowl and add your choice of seasonings such as: salt, pepper, nutritional yeast, turmeric, cayenne etc.
Heat a little oil in a fry pan and when hot add the eggs or tofu. Cook over medium heat, stirring slowly, until eggs just come together (or tofu is heated through).
While the eggs/tofu are cooking, toast your bread in a toaster.
When the eggs/tofu is ready, add the kraut to the pan and fold through the scramble. Remove from heat.
Place toast on serving plates and pile high with golden scramble.
Garnish with microgreens or freshly chopped herbs, and season with salt & pepper.
Enjoy while scramble is warm with a glass of your favourite kefir.
